Mountain Wildfire Ramen: Hokkaido Ramen Santouka in Toronto

First of all, I'm new to the art of ramen. While I did try a few ramen places in Montreal and Toronto, the best bowl I had until now was at Kinton in Toronto, I never explored the subject of ramen in great details. I knew they were few different styles, and that Hokkaido was famous for Miso Ramen.

I had the joy of trying Santouka Ramen this morning, which apparently the name translate into Mountain wildfire (says a random user on Chowhound).

As we can notice, the restaurant does have that industrial chic to it, it does look pretty good to be honest. It is also really near Ryerson University.
I know it might be a faux pas, but I had a coke while eating this meal. Frosted glass and glass bottle instead of the can. Nice touch.

Since its Monday, it 3-gyoza-free-if-you-order-a-ramen day. Delicious Japanese-style gyoza, with a touch of ginger.

The Ramen that was ordered was Miso Ramen, since this chain does claim a Hokkaido heritage, I wanted to try the real stuff, with an extra soft-boiled egg.
The ramen was deliciously fat. It came with Jelly ear, bamboo shoots, narutomaki (a type of surumi?) and charsiu. The noodles were chewy, the way noodles are chewy when Kansui is involve. Broth was a tad salty, but this is miso-based, so it was expected. Green onion, Garlic, sesame, some delicious fat from the broth, it was a pretty good bowl of noodles.
Special props to the egg tho, it was silky, creamy, and perfectly cooked. It reminded me why I love soft-boiled eggs. I did add it to my ramen, but I had to take this picture first.
